Why buy your meats
at The Roe?
The butcher shop at the Roe began as a whole animal butcher shop, and while we no longer process whole cow, the procedures and techniques have stayed true to the whole animal mentality. We exclusively use grass fed and finished beef (Hunter Cattle), and hogs that only eat crops grown on site (Comfort Farms). We understand how special our farmers and local resources are, and with that, it is our privilege and responsibility to use every part of the animal out of respect to its life and the farmers who raised and cared for it. Trim becomes salami, bones become stock, and the head and ears become souse and guanciale. As many people start to become reeducated on the ingredients in their food and how it’s made, (especially in America) we hope to bring you closer to the incredible animals that give us life, both in experiencing incredible taste and nourishing our bodies in the cleanest and most sustainable way possible.
